Monday – Running Errands all day – Out to eat

Tuesday – Pork loin, potoates, green beans with strawberry cake for desert

Wednsday – Hot dogs, beans, and buttered noodles

Thursday – One pot wonder – Stew

Friday – leftover stew and loin

Saturday -

Sunday -

still not sure what we are doing this weekend may go away. So no meals planned atm.

Jimmy and Blazer

We have some new babies thier names are Jimmy and Blazer. We adopted them and they have been here a few weeks, hence the sparatic posts. One of them really needed to gain weight and the other was the pillsberry dough horse, so he needed a lot of expercise to turn that all into muscle. They are really starting to do well and I love every mintue that we get to spend with them. The girls love having horses in thier backyard and it is so neat to look out the window and see them out there.

Tomorrow Night’s Dinner

Ham, Chicken and Cheese Casserole

Ingredients:

3/4 pound mushrooms, sliced

1 large onion, chopped

1 green pepper, chopped

1/4 c. butter

1/2 c. all-purpose flour

1 2/3 c. milk

14 1/2 oz. chicken stock

16 oz frozen broccoli florets, thawed and drained

2/3 c. Parmesan cheese

1/2 tea. salt

1/2 tea. pepper

1/8 tea. nutmeg

package spiral noodles, I use the spinach and tomato ones, but use what you like

2 c. cubed cooked ham

2 c. cubed cooked chicken

2 c. swiss cheese

Directions:

Chopping

do your prep work before you get started cause after the sautee it does not take long and because there is milk involved you much watch the pot.

1. Sautee mushroom, onion, and green pepper in butter till tender

Into the pot to sautee

After Sauteed

2. Stir in flour until blended
3. Slowly add milk and broth, bring to a boil, stir until thickened

Stiring to a boil and waiting for it to thicken

4. Add broccoli, 1/3 c. parm cheese, 1 c. swiss cheese, chicken, ham, salt, pepper, nutmeg, and pasta

Ready to add to baking pan

5. Add to 13×9 baking dish

Ready to pop into the oven tomorrow

You can pop it into the over now at 350 for 20 minutes covered, then remove the cover and add the left over swiss and parm cheese and continue baking uncovered till cheese is melted.

You could also freeze it, just make sure to keep your extra cheese with it so that you have it when its time to bake it up.

Shrimp Dip

This recipe is always a hit when I have company or go to a party. Everytime someone invites me to there house they say “as long as you bring the Shrimp Dip” or if I invite people over they say “only if your going to have shrimp dip.” They love it and can’t get enough of it. I enjoy it best on club crackers or pretzels.

1 lg Philadelphia Cream Cheese package

2 tablespoons Katsup

1/2 cup Mayo

2 tablespoons Dry Minced Onions (must be dry do not sub for chopped onion)

1 can sm shrimp pieces, drained

Dump altogether and stir. Cover and let sit in the fridge for at least 4 hours, so that the flavors can blend and the onions can rehydrate, but 12 hours is best. Serve and enjoy.

….but we are getting back to normal here. We have been busy with catching up on all the laundry and other things around the house. Plus we all have Spring Fever. I miss posting and reading blogs. I have read all of you who I subscribe to as often as possible to stay up to date but there are still so many unread posts and you all keep adding to it. lol.. I am hoping to atleast be back to the daily posts like meal planning Monday, and wordless wed this upcoming week, and hopefully back into the full swing of it all the following week.

Slowly Coming Back

Well I got my water and electric back the other day. Now my house is trashed so if I am MIA a bit longer it is because I have to get this house back into shape. On top of that the kids are still out of school due to the disaster so that makes things slow going. I will have pics to post for you soon. I hope to get thru the 150-200 posts that I missed out on with my Google Reader here in the next few days, so watch for me I will be coming by and saying hi. As The Storm Grows!!

I have been sitting here this evening in Western KY, watching the news and waiting for the ice to hit. Well it is here and coming down with avengence. My hubby works the night shift and he is on the way home now, they had to cancel do to ice. I am really worried about him on his ride home, since the roads are already very slick, but he also has to drive over a very big scary bridge. So I am here waiting up for him to make sure that he gets home safe. Schools have already been canceled for tomorrow and I am sure that we will lose power soon. We live so far out in the country, if we lose power it will most likely be for a pretty long time, I do not know what I’m going to do. 3 kids with no electricity, OMG, the stress is mounting as I think about it. Other worries, heater and all cooking is electric, no grill. Guess I will have to cook canned food on the fireplace. Sure hope the fireplace will heat the room so that we do not freeze. I already blocked off the room that the fireplace is in, so that it keeps the heat in there. So I am as prepared as I can be right now. If you do not hear from me for a while it is because I am without power. I will try to post from my phone if possible just to let you all know that I am ok. Stay warm and talk to you later.

Menu Plan Monday

Again this week is a tight week, due to rent being due next week. So there will be a lot of cheap family fav’s on the menu this week and not much varity. I just choose what my family really loves and by in bulk so that 2 to 3 things of meat will last a week.

Week of Jan 26th

Monday – Pasta Puttanesca and homeaide Garlic Sticks

Tuesday – BBQ Chicken, mashed potatoes, fried okra, and cornbread (not the jiffy kind)

Wednesday - Baked Pasta and Garlic Sticks

Thursday – Fried Chicken, boiled potatoes, white beans, and cornbread

Friday – Leftovers

Saturday – Chicken with Cream of mushroom soup and homemade egg noodles with garlic sticks

Sunday – dinner at a friends

Looking Forward to the Dugger Wedding

I am so excited to see tonight’s Dugger wedding. I have been waiting to see this. I just love the Dugger’s, and although I do not agree with everything that they do. I find them very inspiring. They love each other very much and are a close knit family. Michelle is such a sweet women and enjoys caring for her kids and never seems to be upset or frazzled. Well I’m off to take my shower before it comes on.
